On Friday September 10th Michael Quinn, award winning Head Chef at Waterford Castle Hotel & Golf Resort and his team, have planned an evening of Gastronomic delights in the Castle's Munster Room Restaurant. The menu & meal experience on the evening will be centered around the style of hospitality of Princess d'Ardia Caracciola née Mary Purcell-Fitzgerald (1908 - 1968) the last member of the Fitzgerald Family to live in Waterford Castle after generations before her dating back to 1160.
The idea for the evening was born from an interview with the Princess that gained a detailed insight into her typical dinner party menus and their arrangements hosted at Waterford Castle. Each course that is described in the interview will be interpreted and re-created by Head Chef Michael Quinn.
Michael has undertaken extensive research into the menu design and creation for the event he referred to Prosper Montagné's 'La Rousse Gastronomique' first published in France in 1938, in keeping with the time that the Princess would have been a prominent socialite in Irish Society. Michael has also taken ideas for the menu from talking to fellow chefs, experienced gardeners, along with using his own imagination for his creations.
Dishes on the evening will include old classics such as Consommé Julienne, the recipe Michael will use for this is one taught to him by Myrtle Allen during his training days in Ballymaloe Cookery School.
Eggs Rossini will feature on the menu also once again this is a very old recipe named after a famous Italian composer, Gioacchino Rossine, he was a famous for his love of food as well as his music. Along with many other tantalising dishes, such as crystallised greengages, tangerine water ices, creamed sorrel and quail encroûte.
The guests on the evening will be brought back in time, and given a taste of food and hospitality by a noted personality from the local Waterford area and indeed celebrate the 800 year old history of Waterford Castle Hotel & Golf Resort.
This menu promises to impress even the most discerning of foodies! Having trained and worked in Ballymaloe Cookery School before taking in the position of Head Chef at Waterford Castle some 15 years ago. Michael's philosophy of food is simple. Take fresh, organic, locally sourced & seasonal ingredients and cook them simply to retain their true taste. Believing in only sourcing the very best ingredients from the best local suppliers, the focus is on allowing customers experience the true flavour of those excellent ingredients.
Michael is a proud member of Euro-Toques, the European community of over 400 European chefs, whose members are committed to promoting the quality and culinary traditions of each country and region of Europe. He is also a member of the Slow Food Movement in Ireland.
The historical feast also marks the first event on Waterford's Harvest Food Festival 2010 schedule.
The menu on the evening is priced at €80 per person to include wines.
